Ingredients

16 chicken drumsticks, nice plump meaty
¼ cup Big Green Egg Savory Pecan Seasoning
¼ cup chipotle flavored hot sauce
¼ cup maple syrup
¼ cup barbecue sauce
1 cup crushed pork rinds or bbq potato chips or hickory sticks

Instructions

Take a sharp knife and slash the outside of the chicken drumsticks, about a ¼ to a ½ inch deep at most.

Rub the bbq seasoning into the drums making sure to rub it into the slashes. Let marinate in the rub for at least an hour. If you can go overnight the flavor intensifies

Preheat grill to medium-high. About 325 to 350 degrees

In a small bowl whisk together the chipotle hot sauce, maple syrup and bbq sauce. set aside at room temperature

Grill chicken drums for 40 to 50 minutes, turning frequently until the drums are lightly charred and fully cooked but still moist n tender. Minimum internal temperature of 165 F. but personally I think 185 degrees to 195 degrees internal on drums is perfect. The chicken will be moist and juicy and peel tenderly from the bone

Place all the cooked drumsticks into a large bowl

Toss in the bbq sauce mixture

Toss to evenly coat

Toss in the crushed pork rinds or bbq potato chips, mix well

Serve Immediately
